• My GLITTER filled DISNEY inspired WEDDING day!

A little over a year ago I decided to stop mass manufacturing my cupcakes and start focusing on the part of Amanda Cupcake that I love ♥. Oh goodness, I still have these WILD dreams of opening up a cupcake mansion with glitter walls and all things fantastical, I’d even love a chain of them like Starbucks! Those dreams will never go away. But what I did know is that I’d never accomplish those dreams going at the rate that I was. This cupcake queen was staying up all night almost every night for a little over 4 years, baking up a storm for big box retailers. My problem wasn’t…

  • Baking with Mrs. Doubtfire

When I made these cupcakes, I laughed and cried. After I heard the tragic news about the death of Robin Williams, my intuition told me I needed to collaborate with Robin Williams in the kitchen.  So I invited one of my favorite ladies from my childhood (Mrs. Doubtfire) and her swirls of grey curly  hair, oversized grey glasses,to my kitchen.  And the cake scene, oh of course the famous cake scene was re-enacted in our baking collaboration. (upper left cupcake)   Something told me that even in the darkness, people needed to chuckle a little bit.  There have been many words said, many tabloids posted, they won’t stop.  But the echoes of my…

  • Cupcake Sugar Cookie Cutouts

Baking and decorating isn’t the same if I don’t step on sprinkles of crunchy rainbows that fell on my kitchen floor tiles,  find frosting in my curly hair, and wonder if I should ever wash my pants again, because smears of glittery frosting on my pants from a fun night of baking looks so pretty! For those that prefer sugar cookies but love frosting swirls, I made sugar cookies that are inspired by cupcakes, layered with sprinkles, white whipped buttercream frosting, and topped with a bright red sparkly cherry! My cupcake sugar cookies resemble the cupcakes I made last year (they were filled with sprinkles)! This was really easy. You push a hole down…

  • Spiked Rumchata Egg Nog Cupcakes Heal Hearts

Spiked Rumchata Egg Nog Cupcakes.I ditched my little tutu and unicorn horn for a day, and I spiked my cupcakes with some 21+ flavor! The Innocent Egg Nog batter was just sitting there, so lonely. So I poured Rumchata into the batter (and the frosting, oh my!) Now that’s just what the Egg Nog needed…..a Caribbean Friend!A holiday party inside of (and excitingly swirled on top of) a cupcake. I sprinkled edible gold glitter on top of each cupcake to resemble nutmeg.  (The nutmeg is already in the frosting, so I figured that glitter is more shiny and fun than the act of sprinkling the cupcake with nutmeg). I delivered a Rumchata Egg Nog Cupcake gift to my friend who came home from the hospital after…

  • Mountain Dew Doritos Cupcakes & Cake Pops♥

I visit kids all over Wisconsin on a mission to teach cupcakes. The last two places I taught cupcakes to kids (young and old) were the New London Middle School and the McMillan Memorial Library in Wisconsin Rapids! Kids inspire me. And when I teach them cupcakes, I remind them to value their imagination forever. It is probably one of the most valuable gifts every single one of us is born with. My imagination is how I came up with this cupcake: Mountain Dew Doritos Cupcakes and/or Mountain Dew Doritos Cake Pops! ♥Mini bite sized Dorito/Mountain Dew Cupcakes. I like these because you get the flavor in your mouth all in one pop. Inspired by all…

  • Fantasy Vanilla Almond Rainbow Cupcakes ♥

A true story & recipe by: Amanda Cupcake One Starry Starry Night while everyone else was dreaming, I swirled fantasies on top of cupcakes. Little fantasies that tasted like vanilla almond rainbows.   At the first warm & colorful bite of my rainbow cupcake creation, I “remembered” that I had “forgotten” a wild food fantasy from the days before anyone ever called me Amanda Cupcake. ♥ Back in my angsty teen days, I was a painter.  Art was my favorite class, painting was my outlet.  Even back then though, my instincts yearned for something beyond paint.  I wished that I had the tools to create *edible* art that had never been seen before.…

  • Penguin Oreos ♥

Oreo cookies are fun and nostalgic. ♥ But what makes an Oreo cookie more fun than your average Oreo cookie?Well duh, when you turn it into a penguin.  Especially when you turn it into a double stuffed wonder-by stacking an Oreo that is also now a penguin on top of a cupcake. Doesn’t it make you feel double stuffed in that wonderful warm fuzzy happy kind of way? ♥ You could just eat the Penguin Oreos by themselves. It’d be like they are swimming in the cold arctic glaciers when you are dipping them in your tall glass of milk. Maybe Oreo should sell these, boxed up in pretty packages at Christmas. And for dessert..Penguin Cake Pops.…

  • Orange Dreamsicle Cupcakes In the Winter!

Waking up on a winter morning wrapped up in a big puffy blanket, looking out the window at a fresh snowfall is kind of like comfort food. And when the sun goes down, the sparkles in the snow become twinkly stars. If I lived in an edible winter wonderland, the snow would be fluffy and creamy and sugary. Like a dream……. sicle. Orange and White Winter Dreamsicle Cupcakes. I used an extra large #9 Ateco Open Star Tip to swirl frosting dreams come true. I used a basic buttercream frosting recipe, and added a splash of orange extract. See recipe below. My favorite brand of icing color (especially their “electric” line of colors!):  Americolor. Picking up the cupcake with a stick and eating it like…

  • Baby Gender Reveal Cake ♥

One of my favorite things about creating delicious delights for my friends is that I get to be a VIP part of their events. ♥  Even if I am not invited, my cupcakes always are. I look at my cupcakes at these events as an extension of me, dressed in my most glamorous…that vibrant and magic woman in the corner that lures you. This last week was pretty memorable. I had the chance to create something new and completely out of my comfort zone. A 6 layer….extra tall Baby Gender Reveal Cake. The mommy-to-be (Jess) had the ultrasound technician call to tell me the surprise sex of the baby.  When I got the voicemail, I was jumping up…

  • Mini Raspberry Pies on a Spoon!

It all started on the 4th of July. I was walking around the 4th of July Parade with a little tray inspired by vintage cigarette girls.Way better than cigarettes, the tray was full of cake pops that I was selling. And mini raspberry pies that I attached to a spoon. As I passed the crowds in my white halter dress I giggled, “It’s the cupcake parade!” I got a few laughs out of that. I heard a lot of kids saying, “I want one!” Pie is good. Pie is great. So are cupcakes. And cake pops. Cookies. Sugar in general. There is this huge battle right now in the media. Are cupcakes dying? Is pie the next big “thing?” A lot of…
