Shamrock Shake Cupcakes
Shamrock shakes from McDonalds are so addictive. So I replicated that minty magical milky fluffy whipped cream “my cherry on top is drowning in whipped cream” moment in the form of a cupcake. The key ingredients in my recipe to make this taste like the ice cream treat are: instant white chocolate pudding (gives the cupcake an ice cream like flavor), peppermint extract, and magical leprechaun potion extracted from shamrocks (Americolor gel paste). I added little minty milk “shots” to the top of each cupcake to squeeze into my cupcake (or mouth). I made the minty milk at home by mixing it with a dab of peppermint extract & some leprechaun potion (even…

Queen Chrysalis Cupcakes
You might have heard of queen Chrysalis from My Little Pony, and that could be a reason you love these cupcakes. Even though my brand could be tied in with a lot of nostalgic brands like My Little Pony (or some people along my path have called me a living “Rainbow Brite), they aren’t inspired by My Little Pony. They are inspired by my journey as Amanda Cupcake. I have been Amanda Cupcake for 10 years now. In my beginning days as Amanda Cupcake, I was trying to sell my cupcakes by baking them out of a small diner. Unexpectedly a local television producer discovered my blog & they loved my work. They…

Pinkalicious Cherry Chip Cupcakes with Strawberry Milkshake Buttercream Frosting
Valentines Day makes me really happy. It always has, whether I was single or coupled up. It has nothing to do with that for me. Pastel colors and glitter filter over a cold harsh winter. Shiny brand new merchandise exclaims LOVE! on the shelves of every store. In a wild and sometimes scary world, I am hypnotized by giant poofs of huggable stuffed animals that explode out of store displays. If you’ve ever seen the movie ELF with Will Ferrell, my excitement for Valentines Day pretty much embodies the passion that Buddy the Elf has for Christmas. This year I celebrated Valentines Day early by making cupcakes on TV with my friend Amy…

Penguin Oreos ♥
Oreo cookies are fun and nostalgic. ♥ But what makes an Oreo cookie more fun than your average Oreo cookie?Well duh, when you turn it into a penguin. Especially when you turn it into a double stuffed wonder-by stacking an Oreo that is also now a penguin on top of a cupcake. Doesn’t it make you feel double stuffed in that wonderful warm fuzzy happy kind of way? ♥ You could just eat the Penguin Oreos by themselves. It’d be like they are swimming in the cold arctic glaciers when you are dipping them in your tall glass of milk. Maybe Oreo should sell these, boxed up in pretty packages at Christmas. And for dessert..Penguin Cake Pops.…

Orange Dreamsicle Cupcakes In the Winter!
Waking up on a winter morning wrapped up in a big puffy blanket, looking out the window at a fresh snowfall is kind of like comfort food. And when the sun goes down, the sparkles in the snow become twinkly stars. If I lived in an edible winter wonderland, the snow would be fluffy and creamy and sugary. Like a dream……. sicle. Orange and White Winter Dreamsicle Cupcakes. I used an extra large #9 Ateco Open Star Tip to swirl frosting dreams come true. I used a basic buttercream frosting recipe, and added a splash of orange extract. See recipe below. My favorite brand of icing color (especially their “electric” line of colors!): Americolor. Picking up the cupcake with a stick and eating it like…
