I moved out to Los Angeles from a small Wisconsin town to become a fashion designer, and unexpectedly started my life as a fashion designer for cupcakes instead of people (back in my hometown, a decade later). I am a public figure, locally known as the pink haired quirky & soothing sweet baker who bedazzles my cupcake designs on local television morning shows. I thought my dream was to sell my cupcakes in retailers all over the nation, but in the process discovered that my cupcakes are a medium for me to use my voice. Through my hardships I searched for a light, and that is how I discovered this character I created-Amanda Cupcake. People have called me a real life Rainbow Brite. I think that this pink haired cupcake queen is what my soul looks like! I'm also a 40 something mom to a little ginger named Rebel, who is quickly growing!

  • Shamrock Shake Cupcakes

Shamrock shakes from McDonalds are so addictive. So I replicated that minty magical milky fluffy whipped cream “my cherry on top is drowning in whipped cream” moment in the form of a cupcake. The key ingredients in my recipe to make this taste like the ice cream treat are: instant white chocolate pudding (gives the cupcake an ice cream like flavor), peppermint extract, and magical leprechaun potion extracted from shamrocks (Americolor gel paste). I added little minty milk “shots” to the top of each cupcake to squeeze into my cupcake (or mouth). I made the minty milk at home by mixing it with a dab of peppermint extract & some leprechaun potion (even…

  • Dress your cupcakes up in wigs!

The pink hair that I wear is a wig. It’s my signature look as Amanda Cupcake. When people see me in my pink wig, they compliment me on my hair. When I tell them it is a wig, they ask how I make it look like it is SO REAL! I could just make a tutorial of me dressing up in wigs but since I am Amanda Cupcake, and I dress cupcakes up instead of people… I decided to throw a little wig cupcake class, by dressing adorable mini cupcakes in wigs. I made the cupcakes “mini” because these cupcakes were meant to play with! The wigs are placed on edible “cake pop”…

  • “Stay Golden” Betty White Cupcakes

I have a not so hidden talent. I am really intuitive. So I wanted to see if I could capture the spirit of Betty White in cupcake form. By the time I finished the cupcakes, I felt her energy with me in the kitchen, I think she would approve! You can watch the video on how I made them HERE. Here’s the recipe: Ingredients/Supplies:any favorite cupcake recipegold cupcake linerstiny red or hot pink heart sprinkleshot pink edible glitterAmericolor gel paste: black, brown, green, red, yellow, whitegold luster dust + lemon extract, small paintbrush used for food onlycardstock for cupcake wrappers (optional)piping bags, filled with white buttercream (see recipe below)domed silicone mold for frosting…

  • Queen Chrysalis Cupcakes

You might have heard of queen Chrysalis from My Little Pony, and that could be a reason you love these cupcakes. Even though my brand could be tied in with a lot of nostalgic brands like My Little Pony (or some people along my path have called me a living “Rainbow Brite), they aren’t inspired by My Little Pony. They are inspired by my journey as Amanda Cupcake. I have been Amanda Cupcake for 10 years now. In my beginning days as Amanda Cupcake, I was trying to sell my cupcakes by baking them out of a small diner. Unexpectedly a local television producer discovered my blog & they loved my work. They…

  • Gingerdoodle Cookies

When I got married, I asked my husband if we could change our last name to Cupcake.. so that if we had kids we could be known as the “Cupcake” family. He wasn’t really into that idea, but when I changed my last married name, I did fill out paperwork asking to add Cupcake to my middle name. Being a cupcake queen is truly who I am and will always be, so I was willing to make a commitment. But cupcakes are not the only thing I make. I am not going to be humble about this.. I make some pretty amazing cookies. I think they are amazing not only because they are…

  • Sugar Cookie Dough Cupcakes!

I am always trying to think of a way to jazz up a classic vanilla cupcake recipe. Because I have such a wild and free spirit, even my husband is surprised to know that one of my ultimate favorite flavors is a classic fluffy vanilla cupcake. Then again, if you also know me (the 40ish year old mom who wears a pink wig and glitter Uggs, who also named my daughter Rebel), I can’t just bake a vanilla cupcake with plain white frosting and be done. They have to sparkle, or sprinkle, fluff, swirl up high, and sing a flavor story that’s so memorable you’ll never look at a vanilla cupcake the same…

  • Nailed It! Thanksgiving Dinner Dessert

This year so much has changed in the way that we gather with our friends. One way I cope is that I find myself reminiscing at old photos from events I’ve hosted. The other day, I found this photo of my bedazzled Thanksgiving dinner cupcakes from a Nailed It! themed party I hosted for about 20 kids. I love making cupcakes that play mind tricks. Half of these cupcakes….you’d think would taste salty and your mind has you pretty much convinced of that.. until you bite into them and they are sweet! I’ve also had people ask if they are edible, or if they are candles! (people have actually asked if a lot…

  • Pink Supermoon Cupcakes

Since I wrote my last blog entry, the entire world has shifted. I have been hunkered down at home to “social distance” from my friends and family in an effort to slow the spread of the pandemic Covid-19. Last week I stood outside my parents’ door, glass shielding our touches while we talked. No hugs. I’ve been going through some odd process of grief / guilt / fatigue / overwhelm because the world as we know is not the same, and going forward, no matter what happens-good or bad-my world will never quite be the same. I’ve had guilt over buying sprinkles so I could continue baking as my therapy (I even asked…

  • How to Make: Pancake Cupcakes with Candied Bacon on top!

I am a fan of breakfast. Breakfast for dinner especially. And bacon is getting classier all the time. Maple-Maple-Pancake-Pancake-Pancake-Maple Syrup-Candied Bacon Cupcakes ♥ (If you got lost, I started from the bottom and went up in that list). This cupcake is basically an entire breakfast. And an entire meal in a cupcake needs a fork. The cupcake is made with a yellow cake mix as a base, but you’d never know because I don’t follow any of the rules on the box. So for the cake mix nixers: Don’t hate, just bake. You’ll love it. I guarantee. I basically use the box for my base dry ingredients. The added ingredients are Pure Maple…

  • Pinkalicious Cherry Chip Cupcakes with Strawberry Milkshake Buttercream Frosting

Valentines Day makes me really happy. It always has, whether I was single or coupled up. It has nothing to do with that for me. Pastel colors and glitter filter over a cold harsh winter. Shiny brand new merchandise exclaims LOVE! on the shelves of every store. In a wild and sometimes scary world, I am hypnotized by giant poofs of huggable stuffed animals that explode out of store displays. If you’ve ever seen the movie ELF with Will Ferrell, my excitement for Valentines Day pretty much embodies the passion that Buddy the Elf has for Christmas. This year I celebrated Valentines Day early by making cupcakes on TV with my friend Amy…
